So, I've always spoken as 'sy-bee' or 'sy'bees'

I've always pronounced it "sib-ee", have never heard it pronounced differently in fact.

I thought is was pronounced more like 'sib-e-ay' as there is an accent on the é.

It's obvious, you just pronounce it as it's written. :) At least you guys have an idea of what é sounds like which is not the case for most people in the US.
