the other thing that springs to mind is, how much has been machined out of the flywheel and back plate?

Also, if a significant amount has been machined off both backplate and flywheel, even with a new driven plate, the clutch release bearing has to come a lot further "out" of the cover.

Is that oil contamination on the centre of the flywheel?
