On the throttle valve on my carb there is a spring and spiggot. Just wonding what is it and what does it do? Does it affect performance of the engine?

most people will advise you to swap it for a solid butterfly disc and get a dump valve.

to help dissipate the boost when you snap the throttle shut

Quite a lot if your dumpvalve has a heavy spring in it... It'll open really slowly, giving a nice whooooooooooooooooooooooooooooooooooooooooooooooooooooooooooooooooooooooooooooooooooooooooooooooooooooooooooooooooooooooooooooooooooooooooooooooooooooooooooooooooooooooooooooooooooooooooooooooooooooooooooooooooooooooosh instead of a WHOOOOSH.

you could record your own noise and play it back on a PA system when you change gear

or just get a mate to lean out the window and make the noise of your choice

Or dump the spring and solder up the hole.

9.85 @ 145mph
202mph standing mile
speed didn't kill me, but taxation probably will

It is there to reduce hydrocarbon emissions on overrun.

IIRC on all cars it helps prevent over run, also I think it helps prevent turbo stall. If your engine is set-up properly and looked after over run shouldn't be an issue, and if you've got a DV turbo stall shouldn't be an issue either, so you might as well go for a solid disk as the valve impedes the air flow in the carb.
