i was looking on ebay and saw this dashboard, its all stripped out but then its got a huge stainless dash, wouldnt that weigh quite a bit?
A small stainless one might be usefull tho for housing guages etc.

stainless is suprisingly light as you can use thinner stuff, 1 mill stainless is very tough

That looks like the same stainless used in kitchens, not polished to a reflective surface but brushed slightly, looks nice but a bit 'kitcheny' I'd go for aluminium alloy (normal aluminium stuff from a hardware store) use that and polish it up, although a polished dash is not a real good idea. Ali would be light than stainless though, but stainless is more expensive, and from what I've read the more chrominium in it the more expensive and higher quality it is. Read that on wikipedia.

Stainless in catering etc is 316 spec. General stuff use 304.
Stainless is heavier than mild steel
