I have fitted a red top fuel pump so obviously i dont need the standard one bolted on the back of the engine. Can i simply remove it an replace it with a shaped plate of metal and a gasket from some gasket paper?

yep! just make the plate a decent thickness so it will actually seal properly, the ones you can buy are about 2mm thick.
