I really need some education, here! I read the sodium filling gives better cooling (heat transfer), but I know from welding that stainless steel is a lesser heat conductor then normal steel. Would normal steel with sodium filling be better? Why stainless? And what does the sodium filling actually do?

The stem and head are hollow and sodium filled - basically the heat is dissipated faster along the valve than if it was just solid.
Gp A metro turbo's never ran the sodium valves i've discovered recently, they just used one piece valves, with a wide seat width to take the heat away into the head, rather than he guide...

heat transfer...

the sodium melts easily and sits in the head of the valve... the movement of the valve closing flings the sodium back up towards the stem...

Where ever the sodium lands it transfer heat, so it moves heat from the head of the face up through the seam and on into the valve guide.

It basically helps the valves seats and the valve itself last longer.
