10mm seems to be the thickness of choice and indeed what i am using

is that the same thickness as the inlet manifold flange size ? so that they match with the outlet flanges.

The standard turbo manifolds (inlet and exhaust) are ~1/2" thick where the washers seat if un-damaged

I did the opposite (made an inlet manifold to fit between the standard exhaust) and 1/2" thick flanges were spot on to match the exhaust.

You may find that a used inlet manifold is a bit thinner though where the washers seat because of the washers having dug in over the years, the one I used as a model certainly was.
