Made quite a few heat shields in the past from stainless steel, which problably retains the heat longer.

You want as high a heat capacity as possible so that it takes more units of energy to heat a part to a given temperature. Aluminium has a much lower heat capacity than stainless. Also, the mass of the aluminium shield would be less than equivalent stainless one.
