I've only ever replaced one clutch on my Minis and that was several years ago.

What tools should I arm myself with?

And can anyone recommend a good upgraded kit?

spanners, socket set, flywheel puller, breaker bar, old mains/big end shell to lock the flywheel and grinding paste to lap it back onto the crank.

as it's injection, make sure you put the flywheel back on the right way round as it has the equivilent of the toothed pulley machined into the back of the flywheel. If it's 180 degrees out, so is your timing.

as far as the MPI goes the metro turbo clutch should be enough.

If you use anything other than the Valeo pressure plate, the crank sensor trigger in the back of the flywheel will be in the wrong position, and the engine will not run.

This does not mean that all hope is lost. You can use the Metro Turbo pressure plate, but I would use the Minispares 190mm unsprung friction plate. You will need to assemble the clutch first with the Valeo pressure plate, assemble the flywheel back onto the engine, line up TDC on number 1 cylinder, remove the crank sensor, and with a big fat marker pen, as accurately as possible mark the position of the sensor onto the flywheel. Then remove the flywheel again, and re assemble with the AP turbo pressure plate and do it all over again.

What this will show you is where the sensor points to which tooth (3 teeth from a missing one IIRC I dont recall before or after) and where it should be with the new turbo pressure plate. You then need to prise out the reluctor ring and re position it.

Carefull with the reluctor ring as its made of a fairly soft steel. You can use a small screw driver to gently bend all the teeth inwards only a little, then once the ring is out, you can open out the teeth again so that when it is pressed back into the flywheel, it has some grip.

its probably worth doing the primary gear seal behind the flywheel, or at least having one handy in case it needs doing.

Is it 100% necessary to replace the pressure plate, or can I re-use the old one?

Hmmm, so I can't just uprate the friction plate, I need to do the pressure plate and follow Sprockets instructions then?

Glad I asked, I was just gonna use a std MPI pressure plate.....

I don't think the friction plate alone will give much of an increase in grip,

that said, are you actually experiencing any slip? if not just fit the friction plate sprocket posted.
