You need to give more info.
What cooling system do you have?
If you have a side rad is it standard or an upgrade type?
How much water are you putting in it? If you fill it right to the brim it will spit out some water as it expands and has to go somewhere, you need to leave a little space in the top to allow for expansion - it should be filled to about 1/2" above the cores.
Do you have the correct pressure rated cap?
Do you have the correct length cap?

I seriously doubt it!

What electric fan is it?
Do you have a mechanical fan aswell?
There are two lengths of cap - one is deeper than the other, make sure the seal is actually seating in the bottom of the neck and sealing the rad also how old is the cap? Is it knackered and the spring weak allowing the water to come out?
Is your thermostat opening properly?

You need a bigger radiator I think.

I seriously doubt it!

also mini's usually run with the top tank of the rad about 1/3-1/2 full when cold, if theres too much water in there it will just spit it out, try putting the overflow pipe into a beer can, it should then suck back what it spat out when it cools down

in that case i think pauls on the right track,

a std rad cap will push the boiling point of the water up to about 110-115 deg, but if theres no pressure due to a duff/ wrong cap then a mini will easily see over 100 deg when you shut the enging off or even at idle, no pressure = header tank chunder! lol

a cap with a release lever is always worthwhile in my opinion,

Slightly different end of the scale but my 850 engine did the same, I changed the rad cap from an 11lb to a 13lb one and it did the trick, a 15lb cap is also available.
