Tuning Dellorto Carbs

Since the intercooler has been removed the carbs haven;t been adjusted. The car runs heaps better now but sometimes bogs down and backfires when you depress the gas a little to quick. It feels alot like and i have also been told that it is now running a bit to rich. What is the best way to adjusting the mixture on these carbs? As for balancing them unfortunatly it has a very short 2 into 1 manifold so i have been told this is extremely difficult todo because of this. Any help is grealty appricated.
