Not sure why, but i guess on the road you have the cars weight holding you back on the rollers you just have them to turn, he did say some thing about the surface area on a single roller is better for grip them twin rollers. Best 1/4 mile 13.2 seconds @116 mph

Personally i would say its speed, remember they dont floor it in anything other than top.

I would also say that the straps add a load to the tyres. If you accelerate on the road the front suspension lifts and removes weight from the front wheels. On the rollers this does not happen to the same extent.
