Is it possible to use the webber carb from a Renault 5 turbo, as i do have one, but am unsure as to how good it would be if its even usable.
Or alternatively which carb would be best to use if given the choice of any?

What year ?

The R5 Alpine Turbo is suck through so not turbo savvy.

The R5 GT Turbo on the other end is a blow trought setup but it is a 32 mm bore (and a Solex item IIRC).

To me it is simpler and cheaper to convert a HiF 44 to turbo spec as shown in some thread here.

Possible issues are :
- sourcing a manifold as the carb is downdraft

- tuning of the carb as it is meant to go on a 1400 => you'll have to buy jets, chokes, and so on (with the SU, you have to buy needles but they are cheaper and you can tune them)

Also, you already have a SU too and the conversion is quite cheap.

But then it's your call

A Hif44 conversion is simple then? What's it involve? work out cheaper then buying a turbo carb aswell I'm guessing

you could prob get a carb inlet and plenum for under £100, bolt it on maybe get the needle profiled, job done!
